Turkish Kebabs (Kofte)

1 pound ground lamb
1 clove garlic, minced
1 peeled and seeded ripe tomato, diced
1 teaspoon pomegranate molasses
1 heaped tablespoon köfte mix
salt
freshly ground pepper

This recipe couldn't be simpler. Knead the meat with garlic, tomato, molasses and spice mix. Season with salt and pepper. Cover and refrigerate for 20 minutes. With wet hands, divide into equal parts and mold patties. Cook on griddle or barbecue 2-3 minutes per side, until golden brown and cooked through. There are more complicated traditional recipes, but if you're looking for a quick recipe you really can't beat this one.
